Bell Pepper & Tomato Salad
Flavorful, colorful, fresh, crisp, summer salad… the perfect side-dish for any summer meal! Or… by all means, grab a spoon and eat the whole bowl for lunch!
Ingredients
2 Cups (about two) bell peppers (you choose the colors!) - diced
2 Cups (10oz) cherry tomatoes - sliced in half
1 Small red onion - diced
3-4 Cloves of garlic - minced
1 Cup parsley - chopped
2 Tbs fresh lemon juice
2 Tbs red wine vinegar
3 Tbs olive oil
1 tsp cumin
Salt & pepper to taste
Directions
Combine all ingredients into a serving bowl and toss together! Serve fresh or keep in fridge until ready to serve. Feel free to experiment with this salad - Try adding quinoa, cucumber, avocado or mango!
