Easy & Delicious Refrigerator Pickling

This summer I enjoyed tending to our new veggie garden. The cucumbers exploded and I was excited to play around with some different pickling recipes!

Spending time in my garden and kitchen, pickling veggies, is really a sweet way to soak in all of summer. When colder weather comes and my garden has slowed it’s producing, I can pop open a jar of pickles and enjoy the delicious memories of summer preserved within.

INGREDIENTS

It’s best to pick your veggies straight from your garden and immediately soak them in a bowl of ice cold water for an hour or so. This will give you nice, crunchy pickles!

After the veggies have soaked for a while, start heating your water and vinegar on med/low heat. Add the salt and honey and heat just until everything is dissolved. Remove from heat and set aside.

Now the fun part! Slice your veggies however you want. Try slices, spears, wedges or whole! Then arrange inside the jars, packing them pretty tight. While you’re arranging the veggies, add in the peppercorns, fresh dill, garlic and any other spices of choice!

Pour in the vinegar mixture over the veggies to the top and place the lid on the jar. Place in the fridge. Wait about 24 hours before enjoying. Store up to two weeks in the refrigerator (or honestly, a month or two)!

  • Veggies of choice

  • 1 Cups distilled white vinegar

  • 1 Cups water

  • 1 Tbs salt

  • 2 Tbs honey

Optional

  • Black peppercorns

  • Fresh Dill

  • Whole Coriander Seeds

  • Garlic Cloves

  • Peppers
