Delicata Squash

This is my favorite squash to cook (and eat!!). I look forward to it every autumn! It’s super easy, healthy and delicious and a great side dish for any dinner! Delicata squash has a delicate skin, so it does not need to be peeled! We grew a ton in our garden this year and they have been so yummy!

INGREDIENTS

Preheat oven to 425F. Slice the ends of the squash off then slice in half lengthwise. Use a spoon to scrape out all the seeds from the middle of each half. Slice each half into 3/4” pieces. Toss the squash in a bowl with olive oil, salt and pepper.

Spread the squash out on a sheet pan and bake for 15 minutes. Flip each piece and continue to bake for another 15 minutes.

Once the squash is golden brown on either side, sprinkle the shredded parmesan cheese on top and bake for another minute or two until the cheese is melted. Serve hot from the oven!

  • 1 Delicata squash

  • 5 Cloves of garlic

  • 3 Tbs Olive oil

  • Salt and pepper to taste

  • 3/4 C Shredded parmesan cheese
